Ingredients:

    2 cups whole wheat flour
    ½ cup brown sugar
    1/3 cup vegetable oil
    1 cup milk
    2 eggs

    2 tsp baking powder
    2 or 3 over-ripe bananas (mashed)

Method:

Preheat oven to 350°F. Grease a muffin pan or line with muffin papers. Sift flour and baking powder into a large bowl, then whisk in sugar. In a medium bowl, whisk together milk, oil, eggs and bananas. Add the wet ingredients into the dry ingredients, and mix until just combined. Spoon into muffin pans and bake for 15 minutes or until a toothpick comes out clean. Cool slightly, then place on rack to cool completely.

Tip: for a special treat, add 1/2 cup chocolate chips, or mix in chopped nuts!

Makes 12 muffins.

What the kids can do:

- Mash bananas (can experiment using different utensils, ie. fork, potato masher, clean fingers)

- Grease muffin pan (can use a pastry brush or clean fingers), or place muffin liners into pan.

- Help measure ingredients (parents can discuss various measurements)

- Help with sifting the flour

- Help with mixing ingredients together

- Older children can practice cracking eggs

Recipes

Banana Muffins

Ingredients:

   4 whole wheat pitas

   3/4 cup pizza sauce (or tomato sauce)

   20 slices of pepperoni (optional)

   1 1/2 cups shredded mozzarella

   1/2 a red pepper (chopped)

   5 white mushrooms (sliced)

   1/2 cup broccoli florets

   1/4 cup Ffresh basil leaves

Method:

Preheat oven to 450°F. Steam broccoli for 2 minutes in a saucepan of boiling water. Drain. Place pitas on a baking sheet and spread pizza sauce over surface of pitas. Arrange pepperoni and vegetable toppings on pitas. Top with shredded mozzarella. Bake for 10-12 minutes, or until cheese is melted and pita edges are golden. Once out of the oven, top with shredded basil leaves. Let sit 2 minutes before serving.

Tip: Mix it up and try different variations of ingredients depending on your preferences!

Makes 4 pita pizzas.

What the kids can do:

- Arrange pitas on baking sheet

- Spread pizza sauce over pitas

- Arrange toppings and add cheese

- Tear basil leaves

- Broccoli florets can be broken apart into smaller florets using hands

- Older children may help with chopping vegetables, with parental assistance and guidance.

  

Pita Pizzas

Fruit Salad

Ingredients:

   1 pint strawberries

   1 pint blueberries

   2 ripe bananas

   1 large orange

   1 cup grapes

   2 kiwis

   Dressing:

   1/4 cup fresh orange juice

   1 tbs honey

   1/4 cup fresh mint leaves

Method:

Wash all fruit thoroughly. Trim/peel and chop all fruit into small, bite-sized pieces and place into a large serving bowl. Mix fresh squeezed orange juice with honey. Drizzle dressing over fruit. Tear or chop fresh mint and sprinkle over fruit salad. Toss gently to combine.

Tip: Try other fruit combinations, for example a tropical salad using tropical fruit.

Serves 4.

What the kids can do:

- Help wash fruit

- Peel bananas

- Remove leaves from strawberries

- Remove grapes from stems

- Separate orange segments

- Juice orange

- Help measuring honey

- Slice bananas using plastic knife

- Tear mint leaves

- Stir fruit salad together to combine

- Older children may peel orange 

- Older children may assist in chopping fruit with parental help
